- 2 pounds carrots peeled
- 2 Tablespoons olive oil
- 1 teaspoon dried thyme
- sea salt and ground black pepper to taste
- Preheat oven to 425 degrees. Line a baking sheet with parchment paper or foil.
- Place carrots in a single layer on prepared baking sheet.
- Drizzle with olive oil, then sprinkle with thyme, salt and pepper.
- Place in the oven and bake until golden brown, about 25 to 35 minutes.
