Roasted Carrots

Ingredients

  • 2 pounds carrots peeled
  • 2 Tablespoons olive oil
  • 1 teaspoon dried thyme
  • sea salt and ground black pepper to taste

Instructions

  1. Preheat oven to 425 degrees. Line a baking sheet with parchment paper or foil.
  2. Place carrots in a single layer on prepared baking sheet.
  3. Drizzle with olive oil, then sprinkle with thyme, salt and pepper.
  4. Place in the oven and bake until golden brown, about 25 to 35 minutes.
