This fresh, light salad cuts out the high-calorie mayonnaise from traditional tuna salad and adds some fresh fruit and veggies to really freshen things up.
Ingredients:
1 green apple, chopped
2 green onions finely chopped
1/4 cup fresh parsley, chopped
1/4 cup cilantro or basil (optional)
2 cans tuna, in drained
1 Tablespoon Dijon mustard
1/4 cup coconut oil, melted
1/4 cup red grapes, halved
Sea salt & pepper to taste
Mix all of the ingredients in a large bowl and serve immediately. You can serve this salad in large butter lettuce leaves if you desire.
Serves 3-4
