Healthy Banana Pancakes


2 eggs
1 banana
1/8 tsp. baking powder


Heat skillet and grease with coconut oil or non-stick cooking spray. Peel the banana, place in a bowl and mash well with a fork, ensuring there are no lumps. Add the eggs and baking powder and mix well.
Ladle the batter (2-3 tbsp. per pancake) into the skillet and cook till the underside is golden brown. Flip the pancakes and do the same on the other side. Transfer to a serving plate and repeat with remaining batter. Serve immediately.
Makes 2 servings
