Healthy Christmas Side Dishes

Give the gift of health to your family and friends this holiday season with 3 super simple healthy Christmas side dishes for your holiday gatherings!
Whether it’s a work potluck or family dinner, these taste amazing and are sure to be a hit.
We’re sure we don’t need to be the ones to tell you that this is the season where the average westerner gains 7-10lbs in a super short period of time.
Our hope is that these recipes show you that healthy and delicious do go in the same sentence.

  1. Shaved Brussel Sprouts Salad

Ingredients:

–       11lb bag shaved Brussel sprouts (available in most grocery stores)

–       ½ up nuts of choice (almonds, pecans, walnuts work well)

–       1/8 cup chia seeds

–       1/3 dried cranberries

–       1 tbsp olive oil

–       1.5 tbsp balsamic vinegar

–       Salt + pepper to taste

 

Preparation:

    1. Sautee Brussel sprouts to soften (3-5 minutes)
    2. Add in nuts and seeds and sautee about 3-5 more minutes
    3. Mix all ingredients together in a bowl and serve

 

  1. Oven Roasted Garlic Mushrooms

 

Ingredients:

–       1 lb Button mushrooms

–        8 peeled whole garlic cloves

–       3 tbsp olive oil

–       Salt + pepper to taste

Preparation:

    1. Heat oven to 400 degrees
    2. Stir all ingredients in a bowl
    3. Bake in a single layer for 20 minutes and stir half way
    4. Enjoy

 

  1. Oven Roasted butternut squash

Ingredients:

–       4 lbs butternut squash

–       3 tbsp olive or coconut oil

–       Salt + pepper to taste

Preparation:

    1. Heat oven to 400 degrees
    2. Cut squash into 1 inch cubes
    3. Toss squash with oil, salt, and pepper
    4. Roast for about 30 minutes, stirring half way
    5. They’re done when they become golden and a little chewy
