Ingredients:
2 medium sweet potatoes, peeled and grated
Salt and pepper
¼ cup grated white onion
2 sliced green onions
1 egg
2 tablespoons melted coconut oil
Coconut oil spray
Directions:
Preheat waffle maker to high. Peel and grate your sweet potatoes, and season them with salt and pepper. Place the grated sweet potatoes on a clean kitchen towel or paper towels so that some of the excess liquid is absorbed. Let the potatoes sit and drain for 5 to 10 minutes. While the potatoes are draining, combine the onions, egg, and melted coconut oil in a large bowl. Add the potatoes to the egg mixture. Gently combine. Spray the waffle maker with coconut oil. Evenly spread the potato mixture across the bottom of the waffle maker. Close and cook for 10 to 12 minutes or until the sweet potato waffles are crisped and cooked through.
Makes about 4 servings – 1 quarter of full sized waffle
Serve with eggs and fruit/additional veggies for a great healthy breakfast!
